Tim Love is chef/ owner of five acclaimed Texas eateries and one historic saloon and dancehall. He opened his flagship Lonesome Dove Western Bistro in Fort Worth in 2000, and in 2015 opened Lonesome Dove Austin. Like its older brother in the historic Stockyards District, the capital city’s downtown location features Love’s signature urban Western cuisine, which includes a variety of succulent wild game dishes developed with care, skill and finesse of someone who understands and respects the source. Chef Love’s menu reflects ingredients and cultures rooted in the West since the first adventures began on the Goodnight-Loving and Chisholm Trails – but with an added level of modern sophistication.
